Any ideas for occasional frugal meals?

I'll start off with one:

Frugal curry, per person:
1/4 of a 1lb tin tomatoes, incl juice
1 handful frozen mixed veg
1 spoonful your choice of curry powder
just nuke till hot, serve with bread.

One of my favorites which will feed a whole family on just under a lb of
ground beef is spanish rice.   This is a recipe I got from a lady who lived
through the depression.

Spanish Rice

1 lb chopped beef.... (can be made with less too)
1 cup of rice (uncooked)
1 green bell pepper
1 onion
1 - 1 lb can of diced tomatoes with juice.
A few tablespoons of oil
1 tsp salt
a pinch of red pepper flakes

Put the beef, chopped pepper and chopped onion and oil in a fry pan
(choose a pan that has a good fitting lid).

Saute till the meat has turned light brown and the onion and peppers are
cooked a bit.
Add the raw rice and saute that a bit too, till all the grains are coated
with the oil
Add the can of tomatoes and add one can of water.

Cover and simmer till the rice has absorbed all the liquid and the veggies
are cooked.  Usually it takes about 20 minutes.

This is an easy and delicious dish.

Just kidding.
Chicken and dumplings is good.
Probably as cheap as Spanish rice.
But nobody can make dumplings like grandma could.
Wish I'd watched her and memorized what she did.
