Fabulous Hummus Recipe from South Beach Diet Cookbook
2 15 oz cans garbonzo beans
1 ½ slice yellow onion
¾ clove garlic
1 ½ lemons
¾ rotation of olive oil
¾ c tahini
1. drain chick peas reserving 1/4 to 1/2 c of liquid
2. combine chick peas, lemon juice, tahini, onion, garlic, oil,
cumin, and
pepper
3. In blender or food processor, puree until smooth adding the chick
pea
liquid if needed to thin puree (this works great)
4. refrigerate for 3-4 hours or overnite before serving to blend
flavors
5. garnish with fresh parsely, cilantro, or paprika (garnish
optional)
PS always dump ingrediants altogether @ once. Don't mash chick peas
prior to adding other stuff to food processor.

Hmm, looks way short on garlic compared to how we usually make it.

Chickpea flour is available and can be used to make Hummus without
having to use blender.

Just made a batch using 1 bottled roasted red pepper.
