stewed vs "regular" and you usually find onion, celery and bell pepper
are added.

Well, all tomatoes in cans are cooked; in fact, everything in cans
is either cooked or pasteurized. Stewed generally means cooked with
salt, onion, and green peppers, and, maybe, other seasonings such as
garlic powder. If you're in U.S.A. the product's ingredients are listed
on the label in decreasing proportion by weight, although, absolute
quantities are not required.
