can they lose the green if recovered and left to grow some more?

Yes.  Do not eat green potatoes they are poisonous to humans.  Leave potatoes in
the ground until the vine above ground dies back, then harvest.

Or, just peel off the green area of the peel. The poisonous material is
in the skin, not throughout the inside of the potato.

The poison also is not very strong; it'd take a lot of green peel to
make someone sick.
